01 - Combine rolled oats, raw walnuts, and shredded coconut in a food processor. Pulse 5-7 times until ingredients are finely chopped and evenly textured.
02 - Add pitted Medjool dates to the processor. Pulse 4-5 times until the mixture becomes crumbly and dates are evenly distributed throughout the dry base.
03 - Add grated carrots, maple syrup (or honey), vanilla extract, ground cinnamon, ground ginger, ground nutmeg, and salt. Process on high for 1-2 minutes until the mixture begins to clump together and holds shape when pressed between fingers.
04 - Transfer mixture to a large mixing bowl. Gently fold in raisins and additional chopped nuts (if using) with a spatula until evenly distributed.
05 - Lightly dampen hands with water to prevent sticking. Roll approximately 1 tablespoon of mixture at a time into smooth, round balls. Repeat until all mixture is used, yielding about 18 bites.
06 - For added texture and presentation, roll individual bites in extra shredded coconut until evenly coated on the outside.
07 - Arrange bites on a baking sheet or plate. Refrigerate for at least 30 minutes to set texture and enhance flavors before serving.
