01 - Preheat oven to 425°F. Line baking sheet with parchment paper.
02 - Arrange sweet potato rounds in single layer on baking sheet. Drizzle with olive oil, sprinkle with salt, pepper, and smoked paprika. Toss to coat evenly.
03 - Roast for 22-25 minutes, flipping halfway through, until golden and lightly caramelized at edges.
04 - Remove from oven and let cool for 2-3 minutes.
05 - Arrange rounds on serving platter. Sprinkle with crumbled feta, drizzle with honey, and finish with fresh parsley, lemon zest, and black pepper. Serve warm or at room temperature.
