16 - 1/2 teaspoon crushed red pepper flakes

→ Garnish

# How-To:

01 - Cook egg noodles according to package directions. Drain thoroughly, rinse under cold water to stop cooking, and set aside.
02 - Whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, and cornstarch in a small bowl until cornstarch dissolves completely.
03 - Heat large wok over medium-high heat. Add oil, then stir-fry turkey slices for 3-4 minutes until just cooked through. Remove from wok and set aside.
04 - Add more oil to wok. Stir-fry garlic, ginger, and red onion for 1 minute until fragrant and onions begin to soften.
05 - Add bell peppers, carrots, and sugar snap peas. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
06 - Return turkey to wok. Add cooked noodles and sauce mixture. Stir-fry for 2-3 minutes until everything is well coated and heated through. Add spring onions and red pepper flakes, toss briefly.
07 - Plate immediately, topped with toasted sesame seeds and fresh coriander leaves.

# Expert Advice:

01 -
  • Everything happens in one pan, meaning less cleanup and more time eating
  • The sweet and spicy sauce clings to every strand of noodle perfectly
02 -
  • Overcrowding the wok will make everything steam instead of fry, so cook in batches if your pan isn't big enough
  • Cold water rinsed noodles are essential, otherwise they continue cooking and become mushy when you add them back to the pan
03 -
  • Toasting your sesame seeds in a dry pan for 30 seconds before garnishing makes them noticeably more aromatic
  • Adding the sauce around the edges of the wok instead of directly on top helps it heat through faster and coat more evenly
